Staley's Selected Recipes and Menus


For the past few weeks, I've been organizing my collection of old recipe booklets. If I'm being completely honest with myself, I've been doing more reading than organizing. Anyway, I rediscovered this undated copy of Staley's Selected Recipes and Menus and found a half-dozen recipes to add to my "try someday" list. I also found some household hints and suggestions that made me realize that when some things change, they really change & that a lot has stayed the same over the last 100 years or so.

Grapefruit A La St Patrick recipe from New Delineator Recipes, 1930 Edition


Grapefruit A La St. Patrick

1 ounce (2 tablespoons) granulated gelatin
1/2 cup cold water
1/2 cup boiling water
Fresh mint
3/4 cup sugar
1 cup ice-water
2 cups grapefruit pulp and juice
Maraschino cherries

Keep the grapefruit skins, in halves. Simmer a few sprigs of fresh mint in the boiling water until the flavor is extracted. Follow the standard directions for making jelly. When jelly is firm, cut into cubes, pile the cubes in the grapefruit shells and garnish with sprigs of mint and cherries.

Spicy Pumpkin Pie


This clipping from The American Weekly supplement was stuck inside a copy of Household Magazine's Searchlight Recipe Book since the Truman Administration ~


Spicy Pumpkin Pie

½ tsp. salt
1-¼ tsp. cinnamon
1 tsp. ginger
Dash nutmeg
⅓ cup boiling water
2 eggs, beaten
1 cup light brown sugar
1-½ cups canned pumpkin
1-⅔ cups evaporated milk

Combine salt and spices. Gradually stir in the boiling water. Add spice mixture and brown sugar, pumpkin, evaporated milk to eggs. Mix well. Pour into unbaked 9” pie shell and bake at 425 deg. F. for 15 min. Reduce heat to 350 deg. F. and bake for 40 min. Cool thoroughly out of drafts. Serve with whipped cream flavored with ½ tsp. vanilla and 1 tbsp. sugar.




Also, check out the partial ad on the back of the clipping. Looking back, it's hard to believe that some of America's greatest athletes were also heavy smokers, but Joltin' Joe was hardly the only legend to endorse brands like Chesterfield.

Plump Popovers

I found this newspaper clipping tucked inside my copy of The Woman's Home Companion Cook Book, 1946 edition ~



Plump Popovers

Break 2 eggs into a bowl, add 1 cup milk, and beat with rotary beater until well blended. Add 1 cup sifted all-purpose flour and 3/4 teaspoon salt, and beat until smooth. Pour into 8 well-greased heated custard cups or heavy muffin pans. Bake in hot oven (450° F.) 30 minutes. Reduce heat to 350° F. and continue baking 10 minutes. Serve while they're hot.
